雙重厭氧：
Diego 所發展出來的實驗性處理法，程序相當複雜，也無怪乎風味極其特殊。以密封容器先進行紅櫻桃的全果厭氧發酵28小時，去果皮之後，再進行40小時的帶果肉厭氧發酵，所以稱之為雙重厭氧發酵處理法。在發酵的過程中，Diego使用的是特定的容器，而且溫度亦需要持續的監控。在發酵後的乾燥，亦分階段採用不同的參數以達到風味的最佳化。
